Fred Joseph's 

12 oz. bulgar wheat
3/4 cup lemon juice
1/4 cup olive oil
2 bunches of chopped parsley (pick leaves off stems, chop into small pieces)
4-8 small sprig onions with green tops, finely sliced and chopped
4 or more diced tomatoes
salt and pepper to taste

-Rinse Wheat, strain
-Add lemon juice and Oil, mix
-Add remainder of ingredients
-Refrigerate for 2 hours
-Enjoy!

Flour Tortillas
Cream Cheese
Smoked Turkey or Ham
Tabouly

-Spread Cream Cheese on Tortilla
-Add Tabouly
-Add shaved Ham or Turkey
-Roll Up
-Wrap Tight in Plastic Wrap
-Refrigerate 2-4 hours
-Remove plastic, slice and present on trays!


 Dip

Cream Cheese, softened
Tabouly

Mix Together, Serve with Crackers!

Tabouly Recipe by Food Network

Ingredients

  • 1 cup water
  • 1 cup fine cracked wheat
  • 1 cup minced fresh parsley leaves
  • 1/2 cup minced fresh mint leaves
  • 1/2 cup finely chopped yellow onion
  • 3 tomatoes, diced
  • 2 cucumbers, seeded and diced
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice, or to taste
  • 1 teaspoons sea salt

Directions

In a large mixing bowl, pour the water over the cracked wheat and cover, let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped herbs and vegetables and toss with the mix. Combine the oil, lemon juice, and salt in a separate bowl. Add to wheat mixture and mix well. Chill. Serve and enjoy.
